James Beard Award-Winning Chefs Greg Denton and Gabrielle Quiñónez Denton proudly present their newest endeavor, Bistro Agnes.
Bistro Agnes is steeped in the rich history of French cuisine, and is born of a desire to share that tradition with our Portland friends and family. Of course, as chefs, we will always play with our food. But here at Bistro Agnes, we find our inspiration in bringing cooking back to the basics, and we can’t wait to share these classic dishes with you.
The restaurant is named after Greg’s grandmother, a kindhearted woman who deeply influenced our ideas of hospitality. No one ever left Grandma Agnes’ table hungry; she welcomed everyone and made them part of her family.
We hope that through French cooking, we can bring you that same warmth, comfort, and good cheer reminiscent of what we’ve found in our favorite Parisian bistros. From the moment you walk in the door, we welcome you to joyously share in our culinary journey and passion at Bistro Agnes, your new neighborhood restaurant.
At the bar, we hope to bring the comfort of familiar classic cocktails, while inspiring you to try an assortment of spirits from France and beyond. Traditional favorites like Cognac, Armagnac, and absinthe find a home among our global collection of dynamic and distinctive spirits. And our rotating wines by the glass allow guests to always try something new and exciting.
The Bistro Agnes wine list reflects a desire to arouse the same nostalgia as the culinary delights. We focus on Pinot Noir from Burgundy and our local Willamette Valley, and we select wines that speak to the roots and traditions of each distinct area. Our old and new world wines all conjure a sense of place, and they are hand-picked to celebrate the flavors of our menu.

In addition to our cuisine, we offer our clients professional staffing, bartending services, rentals coordination and event planning.
The wine team of AlexEli Vineyards, and Joel Gunderson, of Restaurant St. Jack, are following up their wholesale debut with a retail venture, Coopers Hall Winery and Tap Room. Situated in Portland’s Central Eastside, Coopers Hall is both an urban winery and a taproom pouring up to 44 taps of wine, beer, cider and more. The taproom also holds a full service kitchen serving rotisserie cooked meats and savory sides. The spacious environment invites guests to get closer to all aspects of the wine making experience from grape to bottle. We believe that we have found a perfect location for a serious wine production while also offering a wine service experience unmatched in Oregon or elsewhere.
Dos Hermanos Bakery
Gabriel and Josue Azcorra, the two brothers of Dos Hermanos bakery have been baking bread for the last 15 years. Originally from Mexico (Merida in the Yucatan), they spent the bulk of their recent careers at Delphina’s Bakery prior to joining the ChefStable family in early 2017.
Dos Hermanos bakery focuses on wholesale production making about 14,000 pieces of bread a week for customers all over Portland. The roster includes Lardo, Grassa, Foster Burger, Coopers Hall, Pearl Tavern, Loyal Legion, ChefStable Catering and countless other restaurants outside of ChefStable. But be sure to check out their storefront on North Williams where they serve sandwiches, coffee, tea and pastries daily.
Fortune has carved a niche as the place to go in Downtown Portland to hear the best DJs in town on an intimate scale. The atmosphere is sleek. Foster Burger is a rock n’ roll burger bar in the Foster Powell neighborhood. Comfortable and casual, Foster Burger embodies the vibe of the city with an emphasis on a no-frills burger done right. Our dining room is covered in local concert posters blending the
Despite the epic eagle motif on the wall, the stoner-rock on the turntable and general industrial feel of the place, you cannot get a tattoo at Grassa. You can, however, get meticulously crafted bowls of fresh pasta on the fly, paired with traditional and seasonal salads, delicious appetizers and tasty cocktails. The brainchild of Lardo kingpin Rick Gencarelli, Grassa pushes the concept of artisan comfort food slung in a no-frills fashion. But don’t get us wrong; the sounds of throttled guitars and pummeled drums may echo through the place, but Grassa has nothing but love for you. When enjoying Rick’s family meatballs coupled with a refreshing Coca-Cola & red wine cooler, taking in the newly born pasta packaged and available for your

Starting life as a food cart in SE Portland, rarely has a spot been so aptly named. Rocking an ancient charcuterie moniker that truly serves as a harbinger of things to come, Lardo is a sandwich shop that worships at the alter of bovine & swine. Using old-world techniques, contemporary flourishes and a gonzo approach, Lardo proudly celebrates its excesses. Pushing a menu that features pork drenched double burgers, a giant meatball Banh Mi, and hand-cut french fries (again) smothered in pork, Lardo also has beer. Lots of beer, actually. Rotating taps of knee-buckling craft brew greatness, backed-up with a refreshing mix of premium cocktails. Operating on both sides of the river at SE Hawthorne and SW Washington, as well as up North on Williams Lardo serves as a mecca for those seeking a uniquely smash-mouth deli experience.
Portland, Oregon has more breweries per capita than any other city in the world, and yet it does not have a signature beer hall to celebrate the tremendous tradition of Oregon Craft Brewing. The craft brewing movement may have officially started in a neighboring state but it is universally acknowledged that Oregon redefined the craft brewing movement and established itself as the capital of American brewing since the late 1980s. The Loyal Legion’s sole purpose is to celebrate the Oregon Craft Brewing tradition. In order to fulfill this purpose we knew that we needed two things: the best selection of Oregon beer in the Country and the best tap system in the country. We’ve built the entire bar around (and on top of) both of these. With 99 Oregon beers on tap during peak activity, and with a tap system that rivals a NASA program, we have everything in place to walk the talk. Add to that a ferocious commitment to maintaining quality through beer line cleaning and maintenance – and we can guarantee not only the best selection of beer in the State but the highest quality of product as well. As if that is not enough, we have partnered with the greatest sausage maker in America, Portland’s own Olympia Provisions, to offer the best

Ox Restaurant finds inspiration in the wood-fired grilling tradition of Argentina, and with it, the culinary heritage of Spain, France and Italy. The name Ox pays homage to the work animal that pulls the plough, tilling the soil and replenishing the land’s ability to produce its fruits, vegetables, and grains. Showcasing prime local meats and fish, Ox also features seasonal produce in distinctive preparations. Ox harnesses the culinary talent of Portland chefs Greg Denton and Gabrielle Quiñónez Denton in a friendly and comfortable neighborhood restaurant with an energetic vibe and creative menu designed to appeal to the palate of the Pacific Northwest.
